What Is BACCHUS?
BACCHUS is a tablet-first training system for Kirkwood's back of house. It replaces paper cert cards, verbal walkthroughs, and “ask a senior cook” with a self-contained discipline engine — cooks can use it on their own time, before service, during prep, or at home.
Every dish on the menu lives here: components, allergens, thermal specs, and the full execution sequence. The system tests you until you know it cold.
Getting Started
1Create Your Profile
Go to Profile in the sidebar. Enter your name and role (Line Cook / Lead Cook / Chef). Your certifications and drill history are saved on this device.
2Pick Your Station
Go to Stations. Find the station you're assigned to. Each card shows your current mastery percentage.
3Study a Dish
Tap any dish. Read allergens first — always. Then work through components, temps, and the execution sequence.
The Six Stations
Grill
9 DISHES
All grilled proteins. Steaks held sous vide at 120°F, finished to order in cast iron. Supports Sauté and Inside Expo.
Garde Manger
15 DISHES
Cold dishes and desserts. Salads, cold appetizers, crudo, tartare, and all pastry items.
Entremetier
7 DISHES
Hot appetizers and shared plates. Wings, oysters, fried items, soups, vegetable sides.
Sauté
4 DISHES
High-speed hot dishes. Pasta, hot sandwiches, and quick-fire entrées.
Inside Expo
4 DISHES
The four mother sauces: béarnaise, bordelaise, green peppercorn cream, lemon caper beurre blanc.
Production
3 DISHES
Stocks and demi-glace. The foundation everything else is built on.
Allergen Protocol
Non-negotiable
If you can't name every allergen in a dish from memory, you are not certified on that dish. One missed allergen call can kill a guest.

Simulation
The drill engine fires the dish at you with a live timer. Steps appear shuffled — tap them in the correct execution order.
Single Dish Drill

Tips for Cooks
→Study before you drill
Read the full dish page before running simulation. The steps are right there — memorize the sequence first.
→Allergens first, always
Before you open a dish in study mode, ask yourself: what are the allergens? Then verify. Build this habit now.
→Beat the target time
Every dish page shows a target execution time. The drill timer starts the second you hit FIRE. Beat it for a timing bonus.
→Multi-fire = real service
If you can execute 3 dishes concurrently and pass — you're ready for a Friday night. That's the bar.
→Search before guessing
If a mod comes in or you're covering a foreign station, search the allergen or ingredient first. Never guess on allergens.
→Profile is your record
Your cert history and drill scores are tracked. Your trainer can see them. Make them reflect real work.
