EXECUTION SEQUENCE — 6 STEPS

Roast bones at 425°F until deeply browned, 45 minutes

Add tomato paste to bones, roast 10 more minutes

Transfer to stockpot, deglaze roasting pan

Add mirepoix, aromatics, cover with cold water

Bring to simmer (NEVER boil), skim impurities

Simmer 8–12 hours, strain, cool per HACCP
