EXECUTION SEQUENCE — 6 STEPS

Cook pappardelle in boiling salted water until al dente, 2–3 min

Reheat ragu in sauté pan, loosen with pasta water

Add drained pasta to ragu pan, toss to coat

Add butter, keep pan moving to emulsify — NO broken sauce

Finish with chives and Parmesan, toss once more

Transfer to warm bowl, microplane Parmesan to order
