EXECUTION SEQUENCE — 6 STEPS

Remove strip from sous vide, pat completely dry

Season all sides with kosher salt and black pepper

Sear in cast iron with canola oil, 2.5 min per side for crust

Add butter, thyme, garlic — baste 45 seconds

Rest 3 minutes, slice against the grain if requested

Place on warm plate, finish with flaky salt and pan jus
