EXECUTION SEQUENCE — 6 STEPS

Remove filet from sous vide, pat completely dry

Season aggressively with kosher salt and black pepper on all sides

Sear in ripping hot cast iron with canola oil, 2 min per side

Add butter, thyme, garlic — baste continuously for 30 seconds

Rest 2 minutes before plating

Place filet center plate, spoon pan jus over top
